Chargrilled Steak with Balsamic Roasted Vegetables Ingredients
2 tablespoons balsamic vinegar
2 garlic cloves, crushed
1 tablespoon fresh thyme leaves
1/3 cup extra virgin olive oil
1 bunch baby beetroot, scrubbed, trimmed, reserving small leaves
1 bunch radish, scrubbed, trimmed
1 mini red cabbage, cut into wedges
1 red onion, cut into wedges
600g piece thick beef rump steak
Mashed potato, to serve
1) Preheat a barbecue grill (with hood) on high heat, with hood closed.
2) Combine vinegar, garlic, thyme and 1/4 cup oil in a small bowl. Place beetroot, radish, cabbage and onion in a single layer, in a large disposable foil tray. Drizzle with vinegar mixture. Season with salt and pepper. Reduce barbecue grill heat to medium. Place tray on barbecue hotplate. Close hood. Cook, using indirect heat for 30 to 40 minutes, turning vegetables halfway through, or until tender. Remove from barbecue. Cover to keep warm.
3) Increase barbecue grill to medium-high heat. Drizzle steak with remaining oil. Season with salt and pepper. Cook steak for 3 minutes each side for medium, or until cooked to your liking. Transfer to a plate. Cover loosely with foil. Stand for 5 minutes to rest.
4) Slice steak. Serve with mashed potato and roasted vegetables sprinkled with reserved beetroot leaves.
