On the 1st day of Christmas my true love gave to me… a mouth-watering Christmas Cake!
At Harvey Norman, we’re celebrating the 12 Days of Christmas with 12 delicious recipes. On the menu today: Coconut and Raspberry Layer Cake.

300g unsalted butter, melted.
2 cups (440g) caster sugar.
4 eggs, lightly beaten.
1 teaspoon vanilla extract.
1 cup (80g) desiccated coconut.
400ml can coconut milk.
3½ cups (500g) plain flour.
3½ teaspoons baking powder.
¼ teaspoon salt flakes.
125g punnet raspberries.
60g unsalted butter, chopped, softened.
¼ cup (55g) caster sugar.
1 egg yolk.
1 teaspoon vanilla extract.
¾ cup plain flour.
1 cup (160g) icing sugar, sifted.
2 teaspoons boiling water.
Small white cachous, to decorate.
Crushed freeze-dried raspberries, to decorate.
Raspberry Pan Jam
1 cup (160g) frozen raspberries.
½ cup caster sugar.
Cream Cheese Icing
500g cream cheese, chopped, softened.
100g unsalted butter, chopped, softened.
2 cups (320g) icing sugar, sifted.

▶ 1. Preheat oven to 160°C (fan forced). Line two lightly greased 20cm round cake tins with baking paper. Place butter, sugar, eggs, vanilla, coconut, milk, flour, baking powder and salt in a large bowl and whisk until smooth.
▶ 2. Pour mixture into cake tins and bake for 55 minutes or until a skewer inserted into the centre comes out clean. Set aside in the tins to cool for 5 minutes, before turning out onto wire racks to cool completely.
▶ 3. Meanwhile, to make the Cookies, place butter and sugar in the bowl of the Kenwood Stand Mixer and beat using the K-Beater for 6-8 minutes or until light and fluffy. Add egg and vanilla and beat for 1 minute to combine. Add flour and beat until just combined. Turn out onto a lightly floured surface and bring together to form a ball.
▶ 4. Roll dough between two sheets of baking paper until 4mm thick. Refrigerate for 30 minutes.
▶ 5. Using Christmas tree cutters, cut out cookies and place on a large oven tray lined with baking paper.
▶ 6. Bake for 10-12 minutes or until golden. Remove and set aside to cool.
▶ 7. To make the Raspberry Pan Jam, place the raspberries and sugar in a medium saucepan over high heat. Bring to the boil and cook, stirring occasionally, for 6-8 minutes or until reduced and thickened. Place in a bowl and refrigerate until cold.
▶8. To make the Cream Cheese Icing, place the cream cheese, butter and sugar in the bowl of the Kenwood Stand Mixer and beat with the K-Beater for 8-10 minutes or until pale.
▶ 9. To assemble the cake, trim the tops off each cake and discard. Slice each cake in half horizontally. Place the base of one cake on a cake stand and spread with 1 cup of icing. Add 1 tablespoon of the jam and swirl through the icing. Repeat the process three more times with cake halves, icing and jam. Cover the top layer and side of the cake with remaining icing.
▶ 10. To decorate the cookies, place the icing sugar and boiling water in a small bowl and mix to combine. Place in a piping bag and pipe around the edge of the cookies. Decorate some of the cookies with white cachous.
▶ 11. Top the cake with cookies and freeze-dried raspberries.
