This time, it’s cocktails! And the great news is we’re not just showing you one. On the menu today is a Cucumber and Finger Lime Gin Frappé and a White Peach Aperol Spritz.
Cucumber and Finger Lime Gin Frappé Recipe
Serves 4
Ingredients
2 cups ice cubes
120 ml gin, chilled
½ cup fresh mint leaves
2 finger limes (see note)
2 Lebanese cucumbers
2 Granny Smith apples
Thinly sliced cucumber, finger lime and mint sprigs, to garnish
Method
1) Place ice cubes, gin and mint into the blender jug of the Breville Bluicer. Cut each finger lime in half, and gently squeeze pearls into blender jug and attach jug to juicer spout.

2) Add cucumbers to jug, turn variable speed dial to Speed 1 and juice cucumbers. Then add apples to jug, turn dial to Speed 3 and juice.
3) Remove juicer attachment and place blender jug onto motor base. Close lid securely, select the Frozen Cocktail Program, and blend all ingredients until smooth. Pour into chilled glasses, garnish with sliced cucumber, mint and finger lime pearls and serve immediately.
Note Finger limes are available from select greengrocers.
White Peach Aperol Spritz Recipe
Serves 4
Ingredients
2 cups frozen chopped white peach
2 cups ice cubes
120 ml Aperol
4 oranges, peeled
400 ml prosecco
Thinly sliced fresh white peach, to garnish
Method
1) Place frozen peach, ice cubes and Aperol into the blender jug of the Breville Bluicer and attach jug to juicer spout.

2) Add oranges to jug, turn variable speed dial to Speed 1 and juice oranges.
3) Remove juicer attachment and place blender jug onto motor base. Close lid securely, select the Frozen Cocktail Program, and blend all ingredients until smooth. To serve, divide frozen mixture among four chilled wine glasses, top with prosecco (about 100ml each) and garnish with fresh peach slices.
