On the 8th day of Christmas my true love gave to me… trifles chilling!
At Harvey Norman, we’re celebrating the 12 Days of Christmas with 12 delicious recipes. On the menu today: Fig, Raspberry and Meringue Trifles.
Prep 10 minutes.
2 cups thickened cream.
2 cups store-bought thick custard.
2 teaspoons vanilla bean extract.
2 tablespoons icing sugar, sifted.
2 tablespoons orange liqueur (optional).
8 figs, cut into wedges.
160g store-bought meringue, crushed.
Small mint leaves, to serve.
▶ 1. Place cream, custard and vanilla in the bowl of an electric mixer and whisk on high for 4 minutes or until thickened.
▶ 2. Place raspberries, icing sugar and liqueur in a small bowl and crush with a fork.
▶ 3. Divide half the raspberry mixture between 8 x 1-cup glasses and top with half the figs.
▶ 4. Layer with half the meringue and half the cream mixture.
▶ 5. Top with remaining raspberries, remaining figs and remaining cream mixture. Top with remaining meringue and mint leaves.
