On the 9th day of Christmas my true love gave to me… jolly jellies!
At Harvey Norman, we’re celebrating the 12 Days of Christmas with 12 delicious recipes. On the menu today: Sloe Gin Turkish Delight and Coconut Jellies.
Prep 15 minutes (+ 40 minutes setting).
Cook 10 minutes.
½ cup (125ml) thickened cream.
2 teaspoons vanilla bean paste.
¼ cup pomegranate seeds.
Fresh unsprayed rose petals, to serve.
⅓ cup caster sugar.
½ cup boiling water.
1 tablespoon powdered gelatine.
1½ cups coconut milk.
Sloe Gin Turkish Delight Jelly
500g frozen raspberries, thawed.
1 cup sloe gin.
2 cups boiling water.
⅔ cup caster sugar.
½ teaspoon rosewater.
1½ tablespoons powdered gelatine.

▶ 1. To make the Coconut Jelly, place sugar and the boiling water in a small heatproof bowl and stir until sugar dissolves.
▶ 2. Sprinkle over the gelatine and whisk to combine. Set aside to dissolve for 4 minutes.
▶ 3. Add coconut milk and whisk to combine. Divide between 9 tall glasses and refrigerate for 20 minutes.
▶ 4. To make the Sloe Gin Turkish Delight Jelly, place raspberries and gin in a medium bowl and crush with a fork. Set aside.
▶ 5. Place the boiling water, sugar and rosewater in a heatproof bowl and stir to dissolve the sugar. Add gelatine and stir to dissolve.
▶ 6. Strain through a fine meshed sieve and set aside to cool.
▶ 7. Pour over the set coconut jelly and refrigerate for 20 minutes.
▶ 8. Place the cream in a bowl and whisk to soft peaks. Add the vanilla and swirl through. Spoon over the jelly and top with pomegranate seeds and rose petals to serve.
