Sparkling Champagne Cocktail with a Grapefruit Twist

On the 3rd day of Christmas my true love gave to me… cocktails sparkling!

At Harvey Norman, we’re celebrating the 12 Days of Christmas with 12 delicious recipes. On the menu today: Sparkling Champagne Cocktail with a Grapefruit Twist.


Makes 9.

Prep 10 minutes (+ 6 hours freezing).

Cook 10 minutes.



½ cup (110g) caster sugar.

½ cup (125ml) water.

4 sprigs rosemary.

2 cups grapefruit juice.

750ml pink sparkling wine.

½ cup Chambord liqueur.

1 ruby grapefruit, peeled, segmented.

4 small rosemary sprigs, extra, to serve.

▶ 1. Place sugar, the water and rosemary in a small saucepan. Bring to the boil and simmer for 8-10 minutes or until syrupy. Pour into a large jug, discarding the rosemary. Add grapefruit juice and mix together.

▶ 2. Divide the grapefruit juice between two large ziplock bags. Place on a large tray and freeze for 4-6 hours or until frozen. Break into pieces.

▶ 3. To make frosé, place the frozen grapefruit and sparkling wine into a Philips Vacuum Blender. Blend until combined.

▶ 4. Pour Chambord into the base of each glass and pour over the frosé. Serve with grapefruit segments and extra rosemary sprigs.


Cook’s note:

We added an extra celebratory touch by dipping the rims of our cocktail glasses in a mix of 1 tablespoon sea salt, 1 tablespoon caster sugar, the zest of ½ ruby grapefruit and ½ teaspoon finely chopped rosemary.
