By fusing Southeast Asian flavours with nostalgic bakery favourites, gifted Melbourne baker Raymond Tan of Dua and Nimbo tells his distinct cultural story with creations such as this vividly delicious riff on the classic Basque cheesecake.

Ingredients
700g quark (available from specialty grocers and selected supermarkets), at room temperature
500g cream cheese, at room temperature
315g caster sugar
9 eggs
125g sweetened condensed milk
45g cornflour
275ml thickened cream
1 tbsp ube extract (available from Asian grocers)
2 tbsp honey
Method for Ube Basque Cheesecake
Begin this recipe at least 7 hours ahead. You’ll need a 23cm springform pan.
1. Preheat: Preheat the oven to 220°C/200°C fan-forced. Line springform pan with baking paper, making sure the paper is at least 3cm above edge of pan, as the cake will rise like a soufflé during cooking.
2. Prepare and Bake Cake Mixture: In a stand mixer fitted with the paddle attachment, beat quark and cream cheese for 4-5 minutes, until smooth and creamy, scraping down side of bowl regularly. Add sugar and beat until combined. Add eggs, one at a time, beating well after each addition. Add sweetened condensed milk and mix until smooth. Sift in cornflour and mix through. Add cream and ube extract and mix until batter is smooth. Pour into prepared pan and bake for 55 minutes-1 hour, until the top is dark and glossy and the cake is set at the sides but still wobbly in the middle. Remove from oven and brush the top with honey.
3. Chill: Allow cake to cool for 2-3 hours at room temperature, then refrigerate for at least 4 hours, or overnight. For a softer, creamier texture, allow cake to sit at room temperature for 1-2 hours before serving.
