Palisa Anderson is known for her vibrant, ultra-spiced and endlessly shareable Thai food using quality produce, much of it grown on her family’s property, Boon Luck Farm, in northern New South Wales. In flavour-first Chat Thai style, she poaches king prawns in coconut milk to contrast with a citrusy banana-blossom salad, and whips up a black sticky rice pudding with a salty-sweet coconut drizzle. The chilli-loving chef also reveals the secret to succulent grilled pork cheeks (hint: it includes more than a lick of smoke and fire).

Lauren Eldridge, the talented group pastry chef behind Stokehouse St Kilda, Stokehouse Brisbane, Fatto and Pontoon, doesn’t do things by halves – her knock-out raspberry-soaked peaches with lolly ice-cream and meringue kisses is testament to this. Eldridge truly offers a taste of the sweet life, but she’ll also show off her savoury smarts with seared yellowfin tuna enlivened by wasabi and pickled radish.
