A stunning centrepiece for any gathering, this Whole Roasted Snapper with Mint and Anchovy Dressing combines flaky, oven-roasted fish with a punchy dressing of anchovy, lime and sesame oil. Finished with plenty of fresh mint, it’s a vibrant dish that balances savoury richness with bright, zesty flavours.

Ingredients
Whole Roasted Snapper
1 whole snapper (about 1.8kg), cleaned and scaled
Sea salt flakes and cracked black pepper
3 limes
2 tbsp extra virgin olive oil
1½ cups mint leaves, to serve
Mint and Anchovy Dressing
4 anchovy fillets, finely chopped
1 garlic clove, finely grated
2 tbsp lime juice
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp rice wine vinegar
¼ cup (60ml) sesame oil
Method for Whole Roasted Snapper with Mint and Anchovy Dressing
1. Preheat the Euromaid 900mm Freestanding Cooker on fan-forced mode to 200°C. Line a large oven tray with baking paper. Pat snapper dry with paper towel and make 3 shallow cuts into each side. Transfer to a prepared tray, season inside and out with 1 tsp sea salt flakes and ½ tsp cracked black pepper. Cut 1 lime into slices and place inside the cavity. Drizzle snapper with olive oil.
2. Place snapper on the centre shelf and roast on fan-forced mode for 25-30 minutes or until golden and just cooked through. Transfer to a serving platter and rest for 5 minutes.
3. To make the anchovy dressing, combine anchovies, garlic, lime juice, fish sauce, brown sugar and vinegar in a bowl, stirring until sugar dissolves. Gradually whisk in oil until combined.
4. Spoon anchovy dressing generously over the warm snapper. Top with fresh mint leaves and serve with remaining lime cut into wedges.
