Pomegranate-Glazed Chicken with Lentil Herb Salad

Take your sweet and sticky chicken to the next level with pomegranate, honey and orange rind. This recipe has arrived just in time for both Father’s day and spring, which are right around the corner! Celebrate the new season and make dad’s day extra tasty this September 3rd with this lip-smacking, finger-licking dish that’s flavoursome, filling and fuss-free to prepare.

1 cup pomegranate juice
1/3 cup honey
1 garlic clove, crushed
1 teaspoon mixed spice
1 long strip orange rind
8 large chicken thigh cutlets, with skin

Lentil Herb Salad
2 x 250g packets pearl couscous
400g can lentils, drained, rinsed
2 lebanese cucumbers, diced
1/4 cup currants
1/4 cup red wine vinegar
1/3 cup extra virgin olive oil
1 cup fresh flat-leaf parsley leaves, torn
1/2 cup fresh coriander leaves, torn, plus extra baby coriander leaves to serve
2 tablespoons chopped fresh chives

1 Preheat oven to 180°C/160°C fan-forced. Line a large roasting pan with baking paper.

2 Combine 1/3 cup pomegranate juice, 1/4 cup honey, garlic, mixed spice and orange rind in a jug. Place chicken on prepared tray. Pour over juice mixture. Season with salt and pepper. Bake for 40 minutes, turning chicken halfway through cooking.

3 Meanwhile, place remaining pomegranate juice and honey in a medium saucepan over medium-high heat. Bring to the boil. Reduce heat to low. Simmer for 5 minutes or until mixture is reduced by half. Remove from heat. Stand for 10 minutes.

4 Turn chicken. Baste with half of the pomegranate glaze. Bake for a further 20 minutes, brushing with remaining glaze halfway through cooking.

5 Meanwhile, make Lentil Herb Salad: Cook couscous following packet directions. Drain. Rinse under cold water. Drain well. Transfer to a large bowl. Add lentils, cucumber and currants. Toss to combine. Whisk vinegar and oil together in a small jug. Season with salt and pepper. Drizzle dressing over salad. Add parsley, coriander and chives. Toss gently to combine.

6 Serve chicken with salad, drizzled with a little pan juices and sprinkled with extra baby coriander.
